Hi, why don't you use \setupinteraction for this?
\pdfinfo{ /Title (\"Ubung) /Author (Münster) } % neither \"U nor ü work
\setupinteraction[title=Übung,Author=Münster]
\pdfcatalog{ /PageMode /FullScreen } % this works well
\setupinteraction[option=max]
\pdfdest num 1 fitbh % I would like to get the same result as in LaTeX with % \hypersetup{pdfstartview={FitBH}}
