it's a browser setup (although a document does contain info about it being doublesided so that a viewer can adapt accordingly) if i remember right, in the past the pdf shown in safari was a just a vertical sequence of bitmaps at some point browsers like chrome got a pdf viewer built-in too, but i always disable that (somewhat crippled) one in favour of the reader plugin.
