Thanks! I can confirm that \emdash works perfectly with the minimal
example I posted.

-- and --- are pseudo ligatures that use the tlig feature which is added 
to each font automatically but depends to some extent to how the font 
has glyphs defined

anyway, using --- is not something recommended
