1. Your example doesn't compile.
2. Your example contains a lot of unnecessary stuff.
3. You're using the \m command wrong, the command is used to create
inline math and shouldn't be needed (with a few exceptions) in a formula
environment.
Change the formula to
\starttext
\startformula
u × (v × w) = u ×
\startmathmatrix[fences=parenthesis]
\NC v_2w_3 \NC - \NC v_3w_2 \NR
\NC v_3w_1 \NC - \NC v_3w_2\NR
\stopmathmatrix
\stopformula
\stoptext
and it should be centered. The paragraph before the formula can be
changed to
Wir berechnen \m {u × (v × w)}:
