Hi Mari,
you have to update your installation because fontawesome 5 uses a new
machanism
to load the symbols from the font files. The first version of the
mechanism from August
did only work when you enabled the symbol set for the whole document and
extended
support was added in September.

If I put \symbol after \showsymbolset, the font gets loaded and the
symbols show up as expected. If I put \symbol before \showsymbolset,
the font seems to get loaded, but instead of the symbol I get its name

correct font doesn't get loaded at all (as far as I understand from
the log) and understandably I get no symbols then. I didn't touch the
stuff above \starttext, just moved the \symbol commands around.
As far as I can tell, the font is properly installed and ConTeXt finds
it (otherwise \showsymbolset wouldn't work, I think). But I've got a
nagging feeling I'm missing something somewhere else. Unfortunately
I'm on thin ice here, fonts really aren't my forte.

Since you didn’t provide a example it’s difficult to tell what’s wrong
for you
but the following example works for me.
Don’t forget to put the files for fontawesome 5 in a folder where
ConTeXt can find them.

\symbol[fontawesome-regular][credit-card]
\symbol[fontawesome-solid][credit-card]
\stoptext
